Great for Passover , Gluten free, one layer rich Chocolate Cake

This recipe is adapted from King Arthur flour website. A few changes were made see below for those changes and other ideas.


1 cup (170 grams) semi sweet chocolate chips

1/2 cup butter (8 tablespoons = one stick 113g)

3/4 granulated sugar (149g)

1/4 salt

2 teaspoons real vanilla extract

3 large eggs room temp

1/2 cup cocoa powder


Preheat oven 375 degrees. Lightly grease 8in-9in pan line with parchment paper.

Over a double boiler, melt butter and chocolate chips.

Transfer to medium mixing bowl.

Whisk/Stir in Sugar, Salt, Vanilla

Add eggs one at a time and stir

Add sifted cocoa powder incorporate everything together stir just until everything is combined

Pour batter into prepared pan

Bake 20-25 mins

Remove from oven and let Cool 5mins in pan

Loosen from pan and flip onto plate or wirerack

Ok so this cake Called for a Glaze and that’s optional . I simply used sifted powdered sugar on top.

Chocolate Glaze

1 cup of chocolate Chips

1/2 cup heavy cream

Heat cream in a small sauce pan bring to simmer not boil. pour Cream over chocolate, whisk, let it rest 5mins. whisk until smooth. pour over and spread on the top of cake letting it go over the edges.


Sifted Powdered Sugar, whipped cream, Ice cream, Berries

A few tips

I used large chocolate chips, but chocolate bars or mini chocolate chips can be used. just make sure its 170 grams.

Make sure to take butter out to soften. Eggs as well but if you forget place in a bowl with warm water .

1-2 teaspoons of Espresso powder can be added to enhance chocolate flavor

adding 2 teaspoons instead of one teaspoon of vanilla gives the cake more mocha flavor.
