Chocolate Cookies ? SIGN ME UP !

The other day I was cooking away the day, making white bean escarole soup, fresh pasta, and tempeh “meatballs”, then i realized i needed something sweet at the end . I wanted to make a quick cookie with just enough sweetness to satisfy me without over doing it. Well these vegan chocolate cookies did the trick for me and believe me no one will even know that they are vegan yes VEGAN!

If you wanted to you could easily switch out

All-purpose flour with gluten free flour

Other changes

Instead of vegan butter, coconut oil can be used.

For more of a caramel taste dark brown sugar instead of light.

Water can be replaced with any non dairy beverage.

So the following recipe was adapted and changed from “Joyful Homemaker”

The recipe said about 24 , I made 12 large cookies and called it a Day!


1 cup all purpose flour

1/3 cup cocoa powder

3/4 cup light brown sugar

1/3 cup ( 5 Tbs) vegan butter melted and slightly cooled

1/2 teaspoon baking soda

1/4 teaspoon salt

4 tablespoons filtered water room temperature


Preheat oven 350 degrees. Line a baking sheet with parchment spray the paper set aside.

Mix the melted vegan butter and light brown sugar together until smooth. In another bowl mix the dry ingredients, flour, cocoa,salt, baking soda. Once the butter and sugar are mixed add the dry mixture , then 4 tablespoons of water. Mix together until just combined. With a tablespoon scoop out dough and place on prepared baking sheet, 4 rows of 3 across. No need to space that far apart they will not spread . With the back of the tablespoon lightly press down the chocolate mound. At this point if you wanted you could add flaky/course sea salt (optional) . Bake for 11- 15 mins. Let rest in hot pan for 1 minute on a baking rack. Remove from baking sheet and let the cookies cool on a the baking rack.
