Having giving up Meat a year and a half ago, I have been finding and cooking amazing alternatives. They are so many meat substitutes out there these days one could easily fill their craving for meat without the feeling of harming animals or just the feeling in general that come with consuming meat. For me I never really loved meat. I close to never ate poultry or steaks. I did however love Meatballs, sausage and pork anything. Finding different ways to sub out meat and incorporate plant based eating was easy for me and I was willing to do it. Which I feel some many people suffer from…. believe me you will not miss Meat!!!!!

Vegan Sloppy Joes

Made with green lentils and tons of flavor. Lentils are packed with nutritional value. Green Lentils are a great source of protein and fiber. Eating lentils are proven to help with heart health, reduce cholesterol, and boost metabolism. With any Lentils, beans or grains you first wanna sort through them and then rinse them.

I originally saw this recipe @theminimalistbaker on Instagram. I changed a few ingredients. I don’t use or have Worcestershire sauce, so I add some rice vinegar. I also didn’t use coconut sugar. I used carrots instead to add the natural sweetness. And I finished the sandwich with shredded iceberg lettuce and not raw onion.

Makes 4-8 Sandwiches

Ingredients

1 cup green lentils, sorted and rinsed

2 cups filtered water

1 medium or half a large yellow onion

1/2 red bell pepper

1 large or 2 small carrots

2 cloves garlic

1 can 15oz organic tomato sauce ; plain

Cumin

Smoked paprika

Red Chile powder

Kosher salt

Black pepper

Olive oil or whichever you like ; but not coconut

Shredded Iceberg Lettuce

Directions

Sort and rinse Lentils.

Mince aka chop into small pieces the onion,carrot, pepper, and garlic.

Have your spices close and ready.

In a saucepan add the 2 cups water and lentils. Begin to cook over med-high heat. Bring the lentils to a low boil, reduce the heat and simmer for 18mins uncovered. (I did stir them a few times and added some extra water. ) Once the lentils are tender drain out any excess water, if any then set aside.

In a medium pan heat a few teaspoons of oil on medium heat . Add the onions, peppers,carrots. Cook for 2-3 minutes. Add minced garlic;stir. Add spices. Adding the spices now will open the aroma up. I added 1 teaspoon red chile powder, 2 teaspoons cumin, 2 teaspoons smoked paprika, salt and pepper; stir. Add the can of tomato sauce and a few dashes of the rice vinegar. stir. Add lentils; stir. Give it a taste and adjust the spices. I of course added more smoked paprika, cumin and salt and a few more dashes of rice vinegar . I left out the Chile powder and black pepper because those two can be added directly before eating for added heat.

Simmer the lentil for 6-10mins stirring them to thicken up.

Taste them again and decide if you are satisfied with the flavor add more spice if needed. Salt and pepper to taste.

Toast your Potato Rolls. The potato rolls I used were of course Martins. They have a roll called big Marty’s seeded that are perfect for the sloppy joes.

Place a heaping large spoonful of sloppy joes on the bun add the shredded iceberg lettuce and devour.
