This bread was around all the time growing up at my Mom’s house and still is. Just last week she sent me a picture of her latest version. She added chocolate chips. I won’t be adding the chips in this bread but feel free. Have fun. This recipe is pretty easy and a great way to begin baking. It’s also a great thing to bake for any occasion.
3 ripe bananas
1/4 cup buttter. melted
I cup sugar
1 1/4 cup flour
I teaspoon baking soda
Optional: Chocolate chips
If your going to add chocolate chips its 1/2 cup and fold them in at the end. When all other ingredients are throughly mixed. I like to take some flour and coat the chips first. This prevents them from sinking to the bottom of the loaf.
Preheat oven 325° lightly grease loaf pan.
Mash bananas and set aside.Whisk flour and baking soda together.
In another bowl add egg, melted butter, sugar. Stir with wooden spoon.
Add bananas to the butter mix.
Add flour, stir altogether.
OPTIONAL: If adding chocolate chips add them at this point
Place in a 9×5 loaf pan. Bake for 1 hour.
Sidenote: My Mom’s recipes are really direct and to the point. She never makes baking look stressful or complicated. I still don’t have the speed but respect her baking skills so much more now that I have become interested in baking. There is just something about home bakers that truly is an art in itself. Just the speed and skill they provide is fascinating to me.
- freeze over ripe bananas in a ziplock bag until you need. It’s one of the best tricks.
- Add Nuts or Dried nuts.
