Absolutely, Hands Down the Richest, Fudge-like Brownies ever ! A must treat for the chocolate lover. And the kicker they are super quick and you only use one pot to make !The key to these tender gems is using cold eggs! Yep I said it Cold Eggs, I doubted this as well until i made them and I was a Changed Man !The use of room temperature eggs will give the brownies a more cake like texture, which of course I will eat as well. This recipe also calls for melting the butter and the adding the sugar and cocoa which I found to add to the fudge like richness of the brownies.

I was also excited to this recipe because it uses one pot and an 8×8 pan.Before you get started line your 8×8 pan with aluminum foil with extra hanging off sides for easy lift-out.

The temperature of the oven is lower then I usually bake brownies on. Which I also helped with the moisture of the brownies. Baking them on a lower temperate for a longer period of time. Genius I tell you!

Ingredients

1 cup 225 grams ( 2 sticks) unsalted butter

1 1/2 cup granulated sugar

1/3 cup packed brown sugar

1 1/3 cup unsweetened dark cocoa

1/2 teaspoon salt

3 large eggs ,cold

3/4 cup all purpose flour

Half a bag Large semi- sweetened chocolate Chips

Directions

Preheat oven 325

In a medium saucepan, melt the 2 sticks of butter. Turn off heat. Using a wooden spoon mix in both granulated and brown sugars, add cocoa and salt . The batter will look and feel gritty . The mix should be lukewarm, if its not let it rest for 5mins.

In the same pot, crack all three Cold eggs, vigorously mix until shiny and all egg has been added well . At this point add flour until it has disappeared, don’t over mix. Add the chips give it a few quick stirs to coat the chocolate chips.

Pour in the 8×8 pan and smooth out to all four corners using an offset spatula. Place in the center rack and bake for 35-45 minutes .

Test with a toothpick a little batter on toothpick is fine. Let the brownies cool in the pan for 10mins. Using the foil hangover remove the brownies and cool on a baking rack and cool completely.

Remove the foil and place on cutting board

Cut and devour !
