Red lentil soup

One bag of split Red lentils* (rinsed)

4-5 Bay leaves 

6 cups of water or stock (more if necessary depending on soup thickness)

4 celery stalks, diced

4 -6 carrots grated or chopped

1 large onion, grated or sliced

2 -3 cloves of garlic chopped

3 tablespoons olive oil

1/2 teaspoon cumin

1teaspoon plus 1/2 teaspoon turmeric

1 teaspoon smoked or regular paprika

1 tablespoon za’atar (optional) save some for soup garnish

Salt pepper to taste

One large lemon sliced to squeeze on soup

Heat the oil in a saucepan.

Add the onions. Cook about 3 mins until translucent. Add the celery cook for another minute . Add grated carrots. Stir together and cook for another 2-3 mins

Add the spices this will open the aromas up mix 30 seconds. Add chopped garlic cook 30 seconds longer. At this point the rinsed Lentils can be mixed into the other ingredients. Add the water or stock .

Bring to a nice boil cook for 1 min. Then Cover and lower heat to simmer. Cook for 10-15 mins if you are using another type of lentil you may need to cook longer check the bag they came in .

Take the lentil soup and puree in a food processor or blender.

Serve with Za’Atar spice & lemon wedges.

You don’t have to blend this soup.

Add as much spice as you like. I always start off with a small amount especially with strong spices like the ones used in this recipe .
